One of the most challenging tasks in daily life is deciding what to have for dinner. Because of our hectic schedule, we tend to choose the faster route which is skipping the whole home cooking and instead buying food that are ready to eat. However doing the latter is not always a good idea because it could be more expensive and at the same time the food could be filled with preservatives. When we prepare our own meal, we have controll over the ingredients and nutrients.
I admit that I’m not consistent when it comes to making dinner but when I do, I usually prefer to make crockpot friendly meals because it saves me time and energy. I also love using the oven because of its endless functions and like the crockpot, I don’t need to check it all the time.
So, anyway, I want to share a meal that I believe is a balanced one. Protein rich, tastes good and easy to make. All you have to do after some minor veggie chopping is to put everything on a ovenproof ceramic cookware.
This meal is actually inspired by Filipino cuisine. I had cravings for Filipino food that day and after “googling” for recipes online, I had my eye on Pineapple Chicken. It’s a dish with chicken marinated in pineapple juice and stewed in pineapple bits, Bell pepper and carrots (check out PanlasangPinoy). But because I had to attend to something else at the same time, I dropped the marinating part and just put everything on the cookware and put it in the oven.


Here’s the recipe:
- Chicken thigh 6 pcs.
- 1 pc chopped onions
- 1/2 cup Chopped leek
- Garlic 6 “boats”
- Bell pepper
- 1 can of pineapple chunks
- 1 cup of water with chicken cube (or broth)
- Something green. Like for instance a leaf salad or something similar.
- Salt and pepper
The process:
Step 1: Preheat the oven for around 190 degrees Celsius
Step 2: Place the chicken and the rest of the ingredients in a ceramic cookware.
Step 3: Cook in the oven for 1 to 1 1/2 hour. Sit back and relax.
Then done! Enjoy the meal with a bowl of warm rice. 😊 I hope you have fun cooking and enjoy your meal!
